Yogurt Parfaits with Raspberries & Chocolate Granola

Ingredients
1/3 cup chocolate chips, melted
2 cups plain granola
2 cups fresh raspberries
2 cups low-fat yogurt, flavored or plain
cherry compote (recipe in instructions)
Directions
- In a small bowl, melt the chocolate chips in the microwave. Place the granola in a mixing bowl. Stir in the melted chocolate, and toss to coat. Spread the granola on a parchment-lined baking sheet, and refrigerate for 15 minutes. Build the parfaits in tall glasses by layering berries, yogurt, granola and cherry compote until glass is full.
Cherry Compote (used for waffles and parfaits)
Total Time: 40 minutes
Serves: 3
- 4 1/2 cups frozen cherries, thawed (about 20 oz)
- 1 cup orange juice
- 1/2 cup sugar
- Bring all ingredients to a boil in a saucepan. Reduce heat to medium-low. Simmer until cherries are softened and start to release juice, about 10 minutes. Using a slotted spoon, transfer cherries to a medium heatproof bowl.
- Simmer the juices until thick enough to coat the back of a spoon, about 15 to 20 minutes. Pour reduced syrup over the cherries. Serve warm.
